What is char siu?

Over the years, the taste of char siu in noodle shops and barbecue restaurants in Chinatowns around the world has evolved into a distinct flavor – sweetness. But today, many restaurants use less seasonings!

You can make char siu from a variety of pork cuts, from boneless pork loins to shoulderpork. However, shoulder meat is the first choice to make delicious char siu (Chinese BBQ).


  • Pork (pork): 1 kg of lean shoulder meat or ham
  • 4 garlic bulbs
  • 3 teaspoons of honey
  • 1 teaspoon of oyster oil
  • 3 teaspoons soy sauce
  • 2 teaspoons five flavors
  • 1 teaspoon pureed pepper
  • 1 teaspoon salt
  • 2 teaspoons of sugar
  • Sesame oil, cooking oil, five flavors

Cut the pork into strips about 3 inches (7 cm) long or thick. Don’t try to cut off any excess fat, as it will disappear and add flavor to the char siu.

– In a bowl, mix the seasonings.

Rub the pork sides evenly with the rest of the sauce in a large bowl or baking dish.

Cover the meat bowl / tray (use plastic wrap) and keep in the refrigerator overnight, or for at least 8 hours. It’s best to also wrap and store the separate marinade in the refrigerator.

Simmer the pork in a wok over medium heat, occasionally turning the meat over until the meat is evenly cooked and evenly colored.
